How to Cook Indian project - Dishes 46-49

This week, we’re looking at some dishes I made back in September.

Hara Bhara Kabab (Spinach and potato kebabs - page 116)

This dish was fairly straightforward to make. Though the kebabs turned out a bit flimsy. I wonder if they should be more crispy than what I could achieve? The edges just started to burn instead of getting crispy on the inside too.

I served this with a simple cilantro chutney on the side.

Hare Moong ka Shorba (Green gram soup with rice vermicelli - page 53)

This recipe was really interesting. It was different, I wasn’t sure what to expect. But it was tasty.

Part of this recipe included adding a rice vermicelli. I wasn’t sure what to look for as this was the first time I was trying to cook with it. I ended up finding some under the Thai Kitchen brand at the grocery store. The noodles I found were thick though, so if you want a thin noodle, then I would recommend looking at a larger grocery store with lots of options, or an Asian grocery store.

Aab Gosht (Lamb with chana dal, green chiles, and coconut milk - pages 349-50)

I really like this recipe. The flavor was great. I liked the addition of the chana dal. As per normal I cut the onions and chiles count in half. I could see making this recipe again, but with chicken, I bet that would be just as tasty!

Bakharkhani (Bread with nuts, spices, and raisins - pages 451-2)

This bread and a lot of different ingredients baked into it. I wasn’t sure if it was supposed to rise or not. Mine didn’t really, and after looking at pictures online, it seemed that that’s what’s expected. It was an interesting bread. It seems like something that could be eaten on it’s own.

Disclaimer and links: As I can’t just post the recipe from the book (I guess I don’t want to get in trouble over copyright) I am including links to similar recipes. That said, I didn’t make the linked recipes, so I can’t vouch for them. I’m only including them in case you want to make something similar, but don’t want to buy the book.
