How To Cook Indian project - Dishes 38, 44, 50

I decided to branch out a bit and try one of the beverages in the book. I don’t recall really liking spiced drinks as a kid, but as this experience has taught me so far, what I liked as a kid isn’t necessarily what I like or don’t like as an adult.

You may notice that the dish # jumps around a bit in this post. I actually made these on different days, with other dishes in-between.

Kairi Panna (tart green mango drink - page 42)

I used a large Keitt mango for this. It was the only green mango I could find. I also learned that keitt mangoes are green when they are ripe… so I’m not sure this was as tart as it could be… But even still., it was delicious! With the one large keitt mango, I ended up with about 18-20 oz. The book recommends adding mint as a garnish, and I thought the mint was delicious with this drink.

Kale Angoor ka Sharbat (Black grape drink - page 43)

I found a concord grape juice at the store for this. I’m not sure if it was right type of grape, but I think it worked out. The recipe calls for crushed ice with juice poured on top. But to create the foam on top, I found a tutorial online that showed that if you put the ice and juice in a blender, and blend it a bit, you’ll get the frothy result.

Lassi with Honey (Sweet yogurt drink with honey - page 44)

I found the yogurt that I used to create too thick of a drink. I think I should have used a different yogurt, or have watered it down a little, or something like that. I would also lower the amount of honey if I were to make it again. It was a bit sugary.

Disclaimer and link: As I can’t just post the recipe from the book (I guess I don’t want to get in trouble over copyright) I am including a link to a similar recipe. That said, I didn’t make the linked recipe, so I can’t vouch for it. I’m only including it in case you want to make something similar, but don’t want to buy the book.

  • A Kapoor Lassi with Honey recipe online

  • I couldn’t find a Kapoor recipe online for the Kale Angoor Ka Sharbat. But a web search did return a number of results from other blogs and sources.
